Since I don't know when, fried spring rolls have become a signature dish for many occasions and often appear on Vietnamese dining tables.

Vietnamese spring rolls, also known as "gỏi cuốn" or fresh spring rolls, are a popular dish in Vietnamese cuisine. They are made with a variety of fresh ingredients, including vegetables, herbs, rice vermicelli, and often protein like shrimp, pork, or tofu, all wrapped in translucent rice paper. These rolls are usually served cold and accompanied by a dipping sauce.

Here's a breakdown of the ingredients typically used in Vietnamese spring rolls:

  • Rice paper: The outer layer of the spring roll is made from thin, translucent rice paper sheets. These sheets are soaked briefly in warm water to make them pliable for wrapping.

  • Vegetables: Common vegetables used in Vietnamese spring rolls include lettuce, cucumber, carrots, and bean sprouts. These vegetables provide crunch and freshness to the rolls.

  • Herbs: Fresh herbs like cilantro, mint, and Thai basil are essential in Vietnamese cuisine and add a burst of flavor to spring rolls.

To assemble Vietnamese spring rolls, you typically follow these steps:

  • Soften the rice paper: Dip one sheet of rice paper into a shallow dish of warm water for a few seconds until it softens. Be careful not to soak it for too long, as it can become too fragile.

  • Assemble the filling: Place a small amount of each ingredient (vegetables, herbs, protein, and rice vermicelli) in the center of the softened rice paper.

  • Roll the spring roll: Fold the sides of the rice paper over the filling, then fold the bottom edge over the filling tightly. Roll the spring roll upwards, keeping it tight as you go to ensure it holds together.

  • Serve with dipping sauce: Vietnamese spring rolls are typically served with a dipping sauce, often made with a combination of fish sauce, lime juice, sugar, garlic, and chili. The dipping sauce adds a savory and tangy flavor that complements the freshness of the rolls.
